The Alchemist To Bring Molecular Mixology To Merseyside

Step inside Liverpool's hottest new cocktail bar, The Alchemist.

OK, it's still got a bit of work to do, but the old Noble House site has been stripped out and it's ready to become one of the most popular bars in Liverpool.

It's due to open later this summer and already the team are hard at work inside the Brunswick Street site.

Managing Director Simon Potts shares his vision for the bar and restaurant as he shows the ECHO around: "We've stripped out the old atrium space as you walk in, so it's light, bright and open.

"We're going to have a long feature bar, with plenty of space to watch the smoke and mirrors as the bar team work their magic. We have a brilliant young team on board."

He walks to the kitchen space at the back of the site, adding: "This is where we have our big open kitchen, so everyone can feel involved in the theatricality of it all. Again, we're really proud of the kitchen team and we want to show off what they're creating."

He describes the menu as casual dining, with some twists: "We'll be doing breakfasts from 8am each day, and then going on to a nice relaxed lunchtime menu of sharing boards with some real star dishes. As the day moves on we get more of an evening feel, the lights go down and again it's that cocktail bar feeling.

"The way we see it, it's an easy space for customers to enjoy - whether it's a business breakfast or a more casual lunch, or popping in for drinks ahead of a meal, then maybe a date venue on a Saturday night. It's a flexible space and we want it to become a regular haunt for customers. They don't have to be dressed up to the nines to enjoy it, but they can do if they want."
